The one we'd bet on  ·  smallest space, fastest open

Onigiri is the clearest trend on this list, and the reason is as much about the buildout as the food. Younger customers increasingly don't want a sit-down meal at lunch — they want something simple, portable, and good, usually paired with a boba. Fast in, fast out. That's the whole visit.

From the owner's side the math is unusual. No full kitchen. No hood. That single fact changes everything: the buildout is cheaper, the plan check is simpler, and the store opens months sooner than a restaurant would. Because it's takeout-driven you don't need a dining room either, so a small, affordable space in a good location suddenly works — a footprint that would be hopeless for a full restaurant.

Low startup cost, small square footage, quick path to opening day. That combination is exactly why you're seeing them appear in malls and downtown blocks all at once.

Katsu is the plate that never has to explain itself. In Korea it's national comfort food — the meal everybody grew up on, the one you order when you don't feel like deciding. Dessert has quietly turned into a space business. It's one of the strongest categories opening right now, and the reason has less to do with the pastry than with what surrounds it. Customers are choosing where to sit as much as what to eat. Taste gets them through the door once; the room is what brings them back, and the story is what they tell their friends.

The idea driving it is what people are calling the urban picnic — somewhere in the middle of the city to slow down for an hour. Not a queue-and-go counter, not a full restaurant either. A place you can set a tray down, take a photo, and stay a while.

Tous Les Jours is the Korean brand that made that translate in the US: wholesome bread baked through the day, a premium room, and a visual standard that holds from one store to the next.

What they have in common

Line the three up and the same shape appears. Each one does a short menu well instead of a long menu adequately. Each sits at a price people can repeat weekly rather than save up for.
